Polenta & Paradise - Perhaps the Same Thing!

I was turned on to the glory of polenta by a roommate I had in Pen Argyl, PA - incredibly delicious stuff!

Love how quick & easy it is to make - seriously the perfect meal for a busy evening.

I've surfed around the net a bit checking out recipes using this scrumptious ingredient. Apparently there are endless ways to prepare it.

Make it for breakfast - think honey, syrup, fruit sauce, or cream! Mmmmmmm!

Make it for lunch - think avocados, salsa, roasted peppers, or asparagus! Oh yeah!

OR make it for dinner - Ancient Allies way ; )

This is what you'll need ...

1 cup polenta

1/2 cup monterey jack cheese (cubed, small)

Olive oil

1 medium sweet onion (cubed, small)

4 large cloves garlic (diced, small)

Pepper

1 large tomato (cubed, small)

4 oz fresh baby spinach leaves (chopped, coarse)

MAKE THE POLENTA:

Cook the polenta according to the instructions on the package. It's pretty simple stuff - much like rice!

When it's done cooking toss in the cheese, stir well ...

Pour into a greased bowl to cool ...

In about 10 minutes it should be solid enough to turn out on to a platter or cutting board ...

MAKE THE CHUNKY MARINARA TOPPING:

Saute the onion and garlic in olive oil until the onion just starts to turn transparent, then toss in the tomato ...

Add some pepper to taste, toss in the spinach and cook it down for just a bit ...

Slice up the polenta ...

Just a few slices in a bowl, topped with tasty chunky marinara sauce ...

AND ...

That's it folks!

It really is that EASY!
